| Murcia, found on the Mediterranean coast between Valencia and Andalusia was once home to the ancient Iberians, Carthaginians and Romans, as well as the Visigoths and Moors. As a result of these different civilisations passing through, Murcia has developed its own distinctive regional culture and cuisine. The unusual Mar Menor, a huge salt water lagoon, is home to wading flamingos and provides warm waters and many extra miles of beachfront. Murcia produces succulent fruit and garden produce and is known for the intense flavor and vivid colors of its vegetables, largely due to the centuries-old Moorish irrigation systems which have turned the otherwise arid landscape to a lush green.
